Ingredients
For the pastry:
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, cold and diced
6-8 tablespoons ice water
For the filling:
1 lb (450g) beef mince
1 onion, diced
2 potatoes, peeled and diced
1 carrot, peeled and diced
1/2 cup frozen peas
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
Salt and pepper to taste
2 tablespoons vegetable oil
1 egg, beaten (for egg wash)
Method:
Make the pastry:
1. In a large mixing bowl, combine the flour and salt. Add the diced butter and using a pastry cutter or your fingers, rub the butter into the flour until the mixture resembles breadcrumbs.
2. Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overwork the dough.
3. Divide the dough into two equal portions, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the filling:
4. In a large skillet, heat vegetable oil over medium heat. Add diced onions and minced garlic, cook until softened.
5. Add beef mince to the skillet and cook until browned, breaking it up with a spoon as it cooks.
6. Stir in diced potatoes, carrots, frozen peas, Worcestershire sauce, salt, and pepper. Cook for an additional 5-7 minutes until the vegetables are slightly softened. Remove from heat and let the filling cool slightly.
Assemble the pasties:
7. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
8. On a lightly floured surface, roll out one portion of the chilled pastry dough to about 1/8 inch thickness.
9. Using a plate or round cutter, cut out circles (about 6-8 inches in diameter).
10. Spoon a portion of the beef and vegetable filling onto one half of each pastry circle, leaving a border around the edges.
11. Brush the edges of the pastry circles with beaten egg. Fold the other half of the pastry over the filling to enclose it, forming a half-moon shape. Press the edges together firmly to seal.
12. Place the assembled pasties onto the prepared baking sheet. Cut a small slit on the top of each pasty to allow steam to escape during baking.
13. Brush the tops of the pasties with beaten egg.
Bake the pasties:
14. Bake in the preheated oven for 30-35 minutes, or until the pasties are golden brown and crispy.
15. Remove from the oven and let cool for a few minutes before serving.
16. Enjoy your homemade beef pasties warm or at room temperature!
They're great for lunch, dinner, or as a snack.
