Beef and Vegetable Soup

Serves:

Ingredients

  • 1 lb (450g) diced beef

  • 6 cups beef broth

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 cup diced tomatoes

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper to taste

  • 2 tablespoons olive oil

Method:

1. In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, sauté until onions are translucent.

2. Add diced beef to the pot and cook until browned on all sides.

3. Pour in beef broth and bring to a simmer. Add diced carrots, celery, diced tomatoes, dried thyme, and dried rosemary.

4. Simmer the soup for 30-40 minutes until the beef is tender and the vegetables are cooked through.

5. Season with salt and pepper to taste.
